Vote in the comments! 👇🏻⠀ -⠀ Yup, I’m one of them guys. I’m a cake batter feen. Put anything cupcake or cake batter flavored in front of me & everything else goes out the window. I’m in. I thought it’d be fun to tell you a few other random foodie facts about myself & want to hear yours too!⠀ -⠀ 1. I consume copious amounts of seaweed & My favorite foods include avocado, nut butter, & anything pickled/fermented. 😂⠀ 2. Dijon is its own food group in my diet.⠀ 3. I grew up on peanut butter & pickle sandwiches. Don’t hate on it till you try it.⠀ 4. I don’t like sweet potatoes prepared in “sweet” ways. I’ll put down some savory sweet potatoes but you won’t see me touching the sweet potato casserole at thanksgiving 🥴⠀ 5. I used to hate my food touching. My salad had to be in a different bowl. My veggies couldn’t touch my protein, etc. so weird, I know.⠀ 6. I could literally eat nut butter by the spoonful. Doesn’t matter what kind. I’ve never met a nut or seed I didn’t like ;)⠀ 7. Speaking of what I don’t like.. there’s only three things. Pineapple, papaya, & cottage cheese. YUCK.⠀ 8. One meal I could have every day? Anything involving peanut/tahini sauce 😂⠀ 9.     APPLE TEA CAKE WITH CHAI FROSTING FROM OUR LATEST BLOG I This delicious Apple Tea Cake with Chai Frosting is perfect for family and friend get togethers over the festive season. This healthy gluten-free cake from our latest blog is full of dietary fibre and nutritional goodness. Apples are an excellent source of dietary fibre that can lower high cholesterol and help promote cardiovascular health. Apples are also rich in important phytonutrients and protective antioxidants. If you're using organic apples keep the skins on for an extra boost in fibre and the antioxidant quercetin . INGREDIENTS: 2 cups of blanched almond meal 2 heap tsp gluten-free baking powder 1 tsp ground cinnamon 1/4 cup raw honey 1/4 cup cold pressed extra virgin olive oil or coconut oil 1 tsp vanilla bean paste or extract 2 organic eggs 2 medium apples, cut into small dices . Frosting: 225 organic cream cheese 1 tsp vanilla bean paste or extract 3 heap Tbsp raw honey 1/4 heap tsp ground cinnamon Pinch of ground ginger Pinch of ground cardamom . METHOD: Preheat your oven to 160*C and grease and line a 6 inch cake tin with baking paper. Combine almond meal, baking powder, and cinnamon together in a large bowl. In a smaller bowl whisk honey, olive oil, vanilla and eggs together then pour into dry ingredients and combine. Fold in apple dices. Leave the skin on if you are using organic apples. Pour mixture into your cake tin and place in the oven for around 50 minutes, or until a skewer comes out cleanly from the middle. Cover with foil if your cake starts to look too brown. Allow your cake to cool completely before you spread with the frosting. To make the frosting blend all frosting ingredients together until well combined. Add more spices if you desire. Spread frosting over your cake and then decorate with desired toppings eg. roughly chopped nuts, spices, flaked coconut, or flowers. Then enjoy . The recipe called for maple syrup but I replaced it with date sugar since I didn’t have maple syrup at home. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Why do I love this raw date sugar ? Although this chocolate cookie cutter cake is a single serving the accompanying homemade lower fat lower refined sugar hot fudge dark chocolate sauce is not! The recipe makes 4 ounces, which is 8 - 1 tbsp servings. At least that's my story and I'm sticking to it! 🍫 Recipe: 2 tbsp 60% (or higher) dark chocolate chips, 2 tbsp butter (the better quality the better), 2 oz 2% evaporated milk, 1 tbsp powdered coconut sugar. 🍫 The secret ingredient is the powdered coconut sugar which I pulverized in my dedicated coffee grinder. Grinding the sugar to a fine powder allows it to melt into the chocolate sauce resulting in a silky smooth texture. 🍫 How would you have your homemade lower fat lower refined sugar hot fudge dark chocolate sauce? FILLING * 5 medium-sized apples, peeled, cored, and cut into small chunks * 1/4 cup maple syrup * 1 tablespoon cornstarch * 1 tsp ground cinnamon * Juice from half a lemon (~2 tablespoons) . TOPPING * 1 cup rolled oats (use certified gluten-free if you are making it gluten-free) * 1/4 cup almond flour * 1/3 cup brown sugar * 5 tablespoons butter, melted (can also use coconut oil instead) * 1/2 tsp ground cinnamon * 1/4 tsp salt .     The beautiful @healthypeach_was our first special guest speaker in our 6 week mini-program, teaching us the ways in which we’re accidentally coming into contact with toxins in our environments. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ It would be safe to assume the food we eat is toxin-free, right? Well, I hate to break it to you but that’s not necessarily the case. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ You know the pesticides which are used in the production of fresh produce to keep out the bugs and insects….yep, you guessed it – we’re also ingesting those. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Eating organic is one way to overcome this but we all know that buying organic does cost a little more. The good news is, that we can pick and choose which items we purchase organic (and those grown conventionally) using two lists called the Dirty Dozen and the Clean Fifteen. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ These lists are created each year by the www.ewg.org and identify the dozen worst affected foods which are covered in pesticide residue. These are the foods which you should aim to purchase organic.     Too good and simple not to share! 2 cups oats - 1 can (15 oz) pure pumpkin - 1/2 cup maple syrup - 2 eggs (L) - 1 tsp baking soda - 1 tsp pumpkin pie spice 🧡 Mix everything in a blender and pour into a loaf pan. Bake on 350°F for 30 minutes. ~
